Sweet Mint

Minted Melon
Prep: 15 min. Chill: 2 hours
1 cup sugar
1/2 cup loosely packed fresh mint leaves
4 1/2 cups assorted watermelon, honeydew,
and cantaloupe balls

1. In a small saucepan, combine sugar and 1/3 cup water. Bring mixture to boiling, stirring occasionally. Remove from heat; cool. Combine the sugar mixture and 1/2 cup mint leaves in a food processor. Process until finely chopped.
2. Place balls of assorted melons in a large bowl. Add mint mixture; toss to coat. Cover and chill for at least 2 hours.
3 . Garnish with fresh mint leaves. Serve with a slotted spoon. Serves 6 to 8.
