Cilantro Pesto

1 jalapeno pepper, halved and seeded

2 cups fresh cilantro leaves

1/2 cup fresh basil leaves

1/4 cup fresh mint leaves

2 large cloves garlic

1/2 cup extra virgin olive oil

1/4 cup water

1 to 2 Tbsp. lime juice

1/2 tsp. salt


In a food processor bowl, place the jalapeno, cilantro, basil, mint, and garlic. Cover and process with several on-off turns until finely chopped. With processor running, gradually add oil and water. Stir in lime juice and salt. Use pesto in small amounts to season grilled meats, fish, chicken, or vegetables. Makes 1 cup.
